Spaghetti Squash is quite a versatile vegetable. Not only fantastic as a side for any dish, it can double and replace pasta in an Italian dish. Our version is served in browned butter (which is oh so nuttty flavored and yummy) and then just a touch of fresh minced garlic and then Parmesan Cheese is added to balance out the flavors. Serves 2. Reheat in the microwave.
