CHICKEN BREASTS topped w/asparagus, mozzarella cheese & fresh mushroom madeira sauce with creamy mashed potatoes

Madeira is a fortified wine that is sweeter than most, and gives this mushroom sauce it's wonderful flavor that compliments the mozzarella and asparagus topped chicken breasts perfectly! The boneless skinless chicken breasts are already pounded plus lightly seasoned for a quick cook on the stovetop, then topped and finished briefly in the oven. Served with a side of creamy mashed potatoes, you'll have a wonderful dinner to enjoy in under 20 minutes.
Serve with a glass of Chianti
Chicken: boneless skinless chicken breast, Wondra flour, kosher salt & pepper, asparagus, mozzarella cheese
Sauce: extra virgin olive oil, mushrooms, Maderia wine, demi glace stock, unsalted butter, black pepper
Mashed Potatoes: potatoes, unsalted butter, heavy cream, salt & pepper
Chicken is cooked on stovetop 10-12 minutes and Broiled in the oven for 1-2 minutes.
